Livestock Bars

 

I made an amazing roast for dinner.  YUM!!!!  I made it in the slow cooker, and the meat was the most tender roast beef I have ever had!!  It’s worth checking out!  I got the recipe from the cookbook Make it Fast, Cook It Slow!  You can find the recipe here.  It has coffee in it, which really tenderized the beef.  I served it with mashed potatoes.  I followed the recipe and didn’t thicken the gravy, but, next time, I think I’ll thicken the gravy.  But, I am going to post a different recipe tonight.

This recipe is from my Auntie Becki.  She’s an amazing cook, baker and cake decorator.  But,  I first tried this recipe when my mom made it.  These bars taste similar to granola bars but much, much better!  They are packed full of goodies.  They have some healthy ingredients in them, and overall I think that they are a better option for a treat than other things!

The recipe calls for peanut butter, but my school is peanut-free.  I want to bring these in my lunch, so I substituted almond butter instead.  I am pretty sure that you could substitute different types of seeds, nuts and dried fruits with great results!  I think this would make a good base recipe, ripe for experimenting.

Recipe from Auntie Becki

1 cup brown sugar
2/3 cup peanut butter
1/2 cup corn syrup
1/2 cup butter, melted
2 tsp vanilla
3 cups oats
1/2 cup shredded coconut
1/2 cup sunflower seeds
1/2 cup raisins
1/3 cup wheat germ
2 Tbsp. sesame seeds
1 cup chocolate chips

Preheat your oven to 350°F.  Prepare a 9×13″ pan by lining it with parchment paper (I suppose this is optional, but it makes life a lot easier when it’s time to remove the bars!).

Measure all ingredients into a medium bowl.  Mix until well-combined.  Press the mixture into the prepared 9×13″ pan.  The batter is sticky, but do your best to press it in well!  Bake for 15-20 minutes.  The bars are done when the edges look golden brown.  It’s hard to tell when they’re done, but I have never had these bars be undercooked.

Let cool on a wire rack, than remove from pan and cut.  Enjoy!
